Menu with a Spanish influence – €45 per person

  • Marcona almonds, fino sherry
  • Andalusian gazpacho with ham and croutons
  • Paella with cuttlefish, chicken, clams and morcilla green salad
  • Torched almond meringue with honey roast fig and PX cream

Menu with a French influence – €45 per person

  • Tempura courgette flowers stuffed with local sheep cheese and honey
  • Salmon confit with lemon and caviar de Aquitaine
  • Wood grilled lamb chops with olive dressing
  • Bulgur salad with apricot and verbena roast golden beetroot, herby puy lentils and goat’s cheese
  • Seasonal fruit galette

Local Menu – €45 per person

  • Salad Niçoise with seared tuna, Ortiz anchovies, home-grown tomatoes and our own eggs
  • Duck breast with black cherry, shallot purée and espelette pepper
  • Hake with white beans, chorizo and paprika, oil-roasted local asparagus
  • Grilled peaches with goat’s cheese, honey and almonds

Best of Basque – €60 per person

  • Bream tartare with orange, oregano and espelette pepper
  • Asparagus with soft boiled eggs and romesco
  • Iruki dry-aged rib-eye chuleta (for 2)
  • Roast seabass with herby lemon dressing (for 2) with potato and fennel purée
  • Tangy sheep’s milk ice cream with cherry compote and tuile biscuit
