Moroccan cuisine
Morrocan cuisine combines elements of Mediterranean and Moorish cooking using the freshest of fish, meat and home-grown vegetables. It is also known for its spices and fragrances; cumin, coriander, saffron, fiery harissa, rose water and dried fruit are some of the ingredients, which give the food its unique flavours.
If you would like to re-create these dishes at home, Simpson Travel has a selection of properties in Marrakech which offer Cookery Lessons.

Marrakech
Marrakech – beautiful and mysterious, is Morocco’s most exciting and magical city. Set against the High Atlas Mountains, surrounded by ochre pisé walls, the city has a rich history and architecture, reflected in its fabulous palaces, ancient kasbahs, fascinating souks and glorious gardens

Essaouira
The pretty blue and white seaside town of Essaouira is only a 2 hour drive from Marrakech, but inside its ancient Portuguese ramparts the pace of life is relaxed and easygoing. It has long been the home to artists, writers and musicians, who integrate well with the local craftsmen and fishermen. Its pleasant climate is kept constantly in the mid 60s to 70s by the refreshing Atlantic breezes.

Agadir & the Atlantic Coast - Taroudannt & Oualidia
The modern seaside town of Agadir enjoys an all year round temperate climate and boasts 9km of sandy beach, a good choice of shops and restaurants, as well as 3 golf-courses. It is also a superb area for nature lovers, birdwatchers and walkers. Nearby Taroudannt, enclosed behind its red ochre ramparts, is an appealing small town with colourful Berber markets. Oualidia is a picturesque fishing village famed for its cobalt blue lagoon and its oyster beds – Oualidia is well-known for its seafood restaurants. Beautiful sandy beaches offer safe swimming and there are boat trips through the wetlands for nature lovers.
Fès and Rabat - The Imperial Cities
Fès, Meknes and Rabat; three great Imperial Cities with three quite different atmospheres, each city with its own beauty, customs and history. Together with Marrakech, they encompass the richness of historic Morocco.
Fès is the most authentic of the three Imperial Cities, and has one of the world’s most ancient medinas. It makes a great starting point for exploring the Middle Atlas Mountains or for visiting the atmospheric ruins of the Roman city at Volubilis or fascinating Meknes, the smallest but prettiest of the Imperial Cities.
Rabat is the political capital of Morocco, and its cosmopolitan charm hides many ancient buildings, including the 13th century Kasbah des Oudaias.
The High Atlas Mountains - Ouirgane, Tamartet, Imlil and Asni
Just over an hour’s drive into the hills from Marrakech are the snow-capped peaks and green valleys of the Atlas Mountains. This is glorious terrain for nature lovers and hikers, or for anyone wanting to experience a way of life which has not changed in hundreds of years. Simpson Travel has an exciting itinerary taking in the Berber villages from Marrakech and the Atlas Mountains.
